Waffles & Chia Berry Jam Recipe

Man, I love waffles. This waffles & chia berry jam recipe is something I could eat almost every day.

Ingredients for Waffles

  • 3 tablespoons unsalted butter (plus more for the waffle iron, if desired)
  • 1 cup all-purpose flour (or ¾ cup whole wheat flour + ¼ cup all purpose flour)
  • 1 teaspoon sugar
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon baking soda
  • ½ cup buttermilk*
  • ½ cup milk
  • 2 eggs (separate egg whites from yolks)

*If you can’t find buttermilk, add 1 teaspoon of lemon juice or vinegar to ½  cup of milk.

Directions for Waffles

  • In a large bowl, sift flour with baking powder and baking soda into a large bowl. Add sugar and salt to the bowl and whisk together.
  • In a separate bowl, whisk egg whites until they’re stiff.
  • In a separate bowl, whisk together buttermilk, milk, egg yolks, and melted butter.
  • Fold wet ingredients into dry ingredients and fold in egg whites.
  • Preheat the waffle iron and use a pastry brush to coat waffle iron with butter. If needed, butter the iron in between batches.
  • Cook waffles until they’re crisp and serve with jam & maple syrup.

Chia Seed Jam

Ingredients

Jam recipe is from Pick Up Limes 🙂

  • 2 cups frozen berries of your choice
  • 1 tablespoon apple or orange juice
  • 2 tablespoon chia seeds

Directions for Chia Berry Jam

  • Place frozen berries in a bowl and microwave for about 3 minutes, stopping to stir once or twice.
  • Remove berries form the microwave, they should have released some juice.
  • Mash the berries, or break them up a bit, while leaving some chunks.
  • Add the chia seeds and the juice and mix well.
  • Let the mix sit at room temperature for about 30 minutes.
  • Store in an airtight container in the fridge for up to 5 days.
